Candice G. Luna

Candice G. Luna takes pride in the fact that she has been mostly self taught in all that she does. When she cooks, she remembers fondly the people along her life's journey who have influenced her, given her advice, and who she's shared meals with. 

She continues to create and re-create tasty recipes using alternative ingredients. Using these alternative ingredients are partly how she healed her own body from pain and illness. She is now living a happy pain-free life because of that. Cooking and food preservation are just a few of her many talents. She is also an avid plant lover and an artist of many mediums. Glass engravings, beading, jewelry making, and sewing, just to name a few. 

Her family means the world to her. She is currently residing in Iowa with her long-time partner, Tyler. Together they have a 4-year-old son, Olimar and a Boston Terrier, Minni Moon. Tyler's mother, Linda also lives with them and provides much love and support.

Jamila Ekkel

At the age of 6, my baking journey began in a flurry of flour and boundless curiosity, guided by my mom’s unwavering faith in my kitchen experiments. She was the best mom ever! Allowing me to tumble and fall. Though my creations (obviously) were far from perfect, they laid the foundation for a lifelong passion for baking and patisserie.

Now, roughly 30 years later, I find myself being on a mission to marry indulgence with health. Crafting delicious, refined sugar-free treats that defy conventional expectations of sweets. September 2023 marked the very beginning of my refined sugar-free journey: a commitment to myself to feel better, instead of damaging my body even further (I have chronic pain issues and sugar seems to cause more inflammation and thus pain inside my body). Through my contribution to this cookbook, I share not only recipes but a vision for treats that delight the palate and nourish the body. Cheers to a new era of sweets, where every bite is an invitation to treat yourself (or others) even better!

Scarlo Folsom

SCARLO learned the basics from her parents. They weren’t the best in the kitchen. Her dad taught her most of what she learned in quick snacks and savory sauces, basic seasonings and garnishes. Her mom taught her the basics of meat and how to know when it is done. To this day her mom declares she never learned to cook since her mom was not the best.

She learned her way around spices and nature and how they work together. The foraging came with practice and her Latino husband who was a chef by trade. He taught her how to use plant spices and make them into a culinary masterpiece. Her health came to depend on this one aspect making adjustments to the way she eats so she doesn’t get sick as often.

Since the new health setting she has become vegan and lived a vegan life sharing and teaching others this way of living. For her it is a better way for her life not for the animals or planet, though they benefit from this new life as well.
